Tsunehisa knives come from various blacksmiths and factories from around Japan. They make many different style blades made from a range of steels. High performing and affordable knives they are a great entry knife into the Japanese knife world.
The bunka, “cultural knife”, is inter-changeable with the santoku. It is an all round kitchen knife, the sharper angled tip is very handy for fine knife work. Great for home cooks and professionals.
SLD semi-stainless steel was originally designed by Hitachi for cutting other steels. It has great edge retention and is fairly nice to sharpen.
