Yoshimi Kato is the 3rd generation of a renowned blacksmith family in Takafu, Echizen, Fukui Prefecture. Head of Kato Uchihamono, formerly known as Kintaro (his grandfather-in-law stared making blades in 1928) Mr. Kato has apprenticed under his father-in-law , Hiroshi Kato, in 2008 he received the certification of the traditional craftsmen before taking over the family business in 2018. He is also responsible for knives produced under other brands such as Kotetsu, Kanehiro and Masagake. Yoshimi Kato’s knives are exquisitely forged and finished. 

Santoku translates to “3 virtues”, good for fish, meat and vegetables. Though they are a taller knife, which makes control a little easier, the santoku is generally smaller in length and perfect for any small prep job.

SG2 is a powdered stainless steel, made by Takefu Steel, is designed for kitchen cutlery. It is corrosion resistant steel and can be heat treated to 64 HRC , it is easy to sharpen, has great edge retention and is loved by professionals. Kobelco Steel's R2 steel is believed to be exactly the same steel as SG2.
